The Origin Story

A Cut Made Famous in Amarillo

In 1960, The Big Texan Steak Ranch opened on Route 66, drawing real cowboys and fascinated travelers from around the world.

Founder R.J. "Bob" Lee noticed the cowboys' large appetites and competitive nature, so he organized a steak-eating contest built around one-pound steaks. The winning cowboy consumed 4.5 pounds of steak, plus the traditional sides: salad, baked potato, shrimp cocktail, and a dinner roll.

That challenge became the famous 72oz Steak Challenge at our Amarillo restaurant. Six decades later, the same 72oz top sirloin still anchors the restaurant legend - and now the cut can be shipped frozen to your door for sharing at home.

Cook It Right

Thaw the 72oz sirloin fully in the refrigerator before cooking. Season generously with BTSR Steak Seasoning, use a meat thermometer, and cook every included item to the safe internal temperature appropriate for that cut.

Cooking & Sharing FAQ

72 ounces is 4.5 pounds of steak - the same legendary cut we serve at our Amarillo restaurant. Sliced and shared, it feeds a hungry family of 4-6 or a tailgate crew of 6-8.
Plenty for the whole table. As a main, the 72oz Steak comfortably serves 4-6 adults. Sliced thin for tacos, sandwiches, or fajitas, it can stretch to 8-10. Check the current product page for exactly what ships with the steak.
Reverse-sear is our favorite for a steak this size. Thaw fully in the fridge, season generously with BTSR Steak Seasoning (or seasoning of your choice), then bring to medium-low heat in the oven (250°F) until the internal temperature is about 110°F. Finish with a hot sear on the grill or in a cast-iron pan. Check the current product page for prep notes and included guidance before you cook.
Slice against the grain into 1/2-inch portions and serve family-style. Leftovers are excellent for steak tacos, breakfast hash, or sliced cold over a salad. Store cooked steak in an airtight container in the fridge for up to 3 days.
