Yes, our steaks are aged for optimal tenderness before being flash frozen at peak freshness. This process helps develop flavor while maintaining the highest quality during shipping.

Orders can be modified or cancelled within 2 hours of placement. After that, orders enter our fulfillment process and cannot be changed.

Shipping
We ship to all 48 contiguous United States. Currently, we cannot ship to:
- Alaska or Hawaii
- U.S. Territories
- P.O. Boxes or APO/FPO addresses
- International destinations
- Standard frozen shipping is confirmed at checkout by lower-48 delivery ZIP code
- Orders over $249 qualify for free ground shipping to lower-48 addresses
- Some ZIP codes may not be eligible for frozen delivery

Every order ships:
- Flash frozen at peak freshness

- Packed in insulated boxes with dry ice
- Via FedEx for reliable delivery
Your steaks will arrive frozen or still cold. Transfer to freezer immediately.
Contact us immediately at customerservice@bigtexan.com. If your order arrives warm, damaged, missing items, or otherwise unsafe, we will review the issue and confirm the best available remedy for the affected items.

Yes! You'll receive tracking information via email as soon as your order ships. Track your delivery status anytime using the link in your shipping confirmation.
Food Safety & Handling
Transfer steaks to your freezer immediately upon delivery. Store at 0F (-18C) or below. Our vacuum-sealed steaks maintain best quality for 4-12 months in the freezer.
If steaks arrived partially thawed but still cold (below 40F/4C), they are safe to refreeze or cook immediately. If steaks feel warm or are above 40F, contact us right away.
Vacuum-sealed frozen steaks maintain best quality for:
- Steaks and roasts: 6-12 months
- Ground beef: 3-4 months
Steaks stored beyond these timeframes are still safe to eat if kept continuously frozen at 0F, but quality (flavor and texture) may decline.
The USDA recommends using a food thermometer to check that meat reaches a safe minimum internal temperature:
- Steaks, roasts, and chops: 145F (63C) with a 3-minute rest time
- Ground beef (burgers, patties): 160F (71C)
These temperatures ensure harmful bacteria are destroyed while still allowing you to enjoy your steak at your preferred doneness.
The USDA approves three safe thawing methods:
- Refrigerator (recommended): Place in the refrigerator 24 hours before cooking. This is the safest method and allows even thawing.
- Cold water: Seal meat in a leak-proof bag and submerge in cold water. Change the water every 30 minutes. Cook immediately after thawing.
- Microwave: Use the defrost setting. Cook immediately after thawing.
Never thaw meat on the counter or in hot water. Bacteria grow rapidly between 40F and 140F (the "danger zone").
It depends on how the meat was thawed:
- Thawed in the refrigerator: Yes, you can safely refreeze within 1-2 days, though some quality loss may occur.
- Thawed in cold water or microwave: Cook first, then freeze the cooked meat. Do not refreeze raw.
When in doubt, cook the meat and then freeze the cooked portions.
Dry ice is extremely cold (-109F) and requires careful handling:
- Never touch with bare skin - use thick gloves or towels (frostbite risk)
- Keep in ventilated areas - dry ice releases CO2 gas that can displace oxygen in enclosed spaces
- Never seal in airtight containers - gas buildup can cause containers to burst
- Keep away from children and pets
- Do not ingest
To dispose: Leave remaining dry ice in a well-ventilated area (open garage, porch) and let it sublimate naturally. Do not put it in sinks, toilets, or trash cans.

Allergen Notice: Our products are processed in facilities that also handle foods containing common allergens, including milk, wheat, egg, soy, fish, shellfish, peanuts, tree nuts, and sesame. We cannot guarantee that cross-contamination will not occur.
Additionally, beef is a known allergen for individuals with Alpha-gal syndrome (a tick-borne red meat allergy).

72oz Steak
The 72oz Steak is the legendary 4.5-pound top sirloin we've been serving at our Amarillo restaurant since 1960. The same cut that made The Big Texan a Route 66 icon - now shipped frozen to your door for family dinners, tailgates, and backyard cookouts.
Same cut of meat as our 72oz Steak, but it is not an official challenge. The original challenge experience lives at our restaurant in Amarillo, never at home.

This is not an at-home challenge. The official 72oz Steak Challenge only happens at the restaurant in Amarillo.
Reverse-sear is our recommended method for a steak this size:
- Thaw fully in the fridge - 24 to 48 hours.
- Season generously with salt and pepper at least an hour before cooking.
- Slow cook in the oven at 250°F until internal temp hits 110°F (about an hour).
- Hot sear in a cast-iron pan or on the grill - 2 minutes per side until you hit your target doneness.
- Rest 10 minutes, then slice against the grain and serve family-style.

Plenty for the whole table. As a main, the 72oz Steak comfortably serves 4-6 adults. Sliced thin for tacos, sandwiches, or fajitas, it can stretch to 8-10. Check the current product page for exactly what ships with the steak.
Returns & Guarantees
Due to the perishable nature of our products, we cannot accept returns on orders that arrive in proper condition. Documented delivery and quality issues are reviewed by our team.
If your order arrives damaged, warm, thawed beyond safe temperature, or not in acceptable condition, contact us within 24 hours of delivery with photos of the packaging and product. We will review the issue and may replace affected items, refund affected items, or issue store credit depending on the situation.
We cannot offer refunds for change of mind on perishable goods that arrived in proper condition. See our full return policy in our Terms of Service.
Your satisfaction matters. If there is a quality issue with your order, contact us at customerservice@bigtexan.com with your order number and photos. We'll review it and confirm the available resolution.
